Equipment

  • Air Fryer
  • Cutting board
  • sharp knife
  • Measuring spoons
  • Tongs or spatula for shaking and serving

Ingredients

  • 2 medium yellow squash sliced into ¼-inch rounds
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: grated Parmesan for topping

Instructions

  • Step 1: Preheat the air fryer to 400°F for 3 to 5 minutes. In a large bowl, toss the sliced squash with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
A metal bowl filled with sliced yellow potatoes being mixed with seasonings by a wooden spoon. Surrounding the bowl are containers of salt, pepper, oil, breadcrumbs, chopped herbs, and small bowls of additional spices.
  • Step 2: Arrange the squash in a single layer in the air fryer basket. Cook in batches if needed so it does not overcrowd.
A wire rack holds evenly spaced yellow squash slices, seasoned with herbs. Nearby are a bottle of olive oil, a bowl of breadcrumbs, a salt shaker, a pepper grinder, chopped herbs, and a whole yellow squash.
  • Step 3: Air fry for 10 to 12 minutes, shaking halfway through, until golden and tender. Serve warm and sprinkle with grated Parmesan if using.
A wire baking rack holds slices of cooked yellow squash with browned spots. Nearby are bowls containing chopped herbs, grated cheese, and a whole yellow squash on a white surface.

Notes

  • Pat the squash dry before tossing with oil to help it crisp better.
  • Use a light spray of oil instead of pouring if you want to reduce calories further.
  • Shake the basket more than once if you want more even browning.
  • Add a pinch of paprika for a subtle smoky flavor.

Storage Directions

  • Refrigerator: Store leftovers in an airtight container for up to 3 days.
  • Freezer: Not recommended. The squash will become too soft after thawing.
  • Reheat: Reheat in the air fryer at 350°F for 3 to 5 minutes to bring back some texture.
  • Make Ahead: Slice the squash and mix the seasoning ahead of time, but cook right before serving for the best texture.
