Equipment

Ingredients
  

  • 2 lb. Boneless skinless chicken thighs cut into small pieces
  • 1 Tbsp. Olive oil
  • ½ Medium onion chopped
  • 3 tsp. Minced garlic
  • 2 Tbsp. Tomato paste
  • 1 Can Unsweetened coconut milk
  • 2 tsp. Ginger paste
  • 2 tsp. Garam Masala
  • 1 Tbsp. Curry powder
  • Salt and pepper to taste

Instructions
 

  • Place the chicken in the bottom of the Slowcooker
  • Add the oil to a skillet on the stove top on medium heat and saute the onions in the skillet until softened.
  • Stir in the garlic, tomato paste and seasonings, and saute for another minute. Add salt and pepper to taste.
  • Slowly whisk in the coconut milk a little at a time.
  • Pour the sauce mixture over the chicken.
  • Cook on high for 4 hours.
