Ingredients
  

  • 5 Boneless skinless chicken breasts
  • 1 Tbsp. Olive oil
  • Salt and pepper to taste
  • C. Pesto sauce
  • 5 Slices of mozzarella cheese
  • 1 C. Cherry tomatoes halved
  • ¼ Red onion sliced thinly
  • 2 tsp. Champagne or white wine vinegar
  • 2 tsp. Lemon juice
  • 2 tsp. Olive oil
  • 2 tsp. Minced garlic
  • Fresh chopped basil for garnish

Instructions
 

  • Preheat an indoor or outdoor grill. While that is heating up, drizzle the chicken with 1 tbsp of olive oil, and season with salt and pepper to taste.
  • Grill the chicken until it reaches an internal temperature of 165 degrees.
  • Turn the oven on broil and Place the chicken into a baking dish, and top with the mozzarella cheese.
  • Broil the chicken just until the cheese melts.
  • Top the chicken with the pesto, sliced cherry tomatoes and red onion.
  • In a bowl, whisk together the 2 tsp olive oil, lemon juice, champagne vinegar and minced garlic.
  • Drizzle the mixture, tomatoes & onions over the top of the chicken, and garnish with fresh chopped basil before serving.
