  • 1/2 cup vanilla protein powder
  • 1 teaspoon pumpkin pie spice
  • 2/3 cup pumpkin puree
  • 1 cup protein milk
  • 2 tablespoons sugar-free maple syrup
  • Toppings of choice: vanilla Greek yogurt, nuts, berries

Instructions
 

  • In a medium mixing bowl, combine the oats, protein powder, and pumpkin pie spice.
  • Add the pumpkin puree, protein milk, and maple syrup, then stir until fully combined.
  • Transfer the mixture to a glass container or jar and cover with a lid.
  • Refrigerate overnight, or until the oats have softened and thickened.
  • In the morning, stir well and top with your favorite toppings before serving.

Notes

  • Store covered in the fridge for up to 5 days.
  • Recipe easily doubles or triples for meal prep.
  • Best texture when made with old-fashioned rolled oats, not quick or steel-cut oats.
