Pumpkin Protein Pancakes

These pumpkin protein pancakes are a fluffy, warmly spiced stack made for fall breakfasts and brunch. Oat flour, protein milk, and pumpkin protein powder give them more protein than a classic pancake. They still taste like real pancakes, just with smarter ingredients.

Equipment

  • Medium mixing bowl
  • Whisk
  • Rubber Spatula
  • Skillet or griddle
  • 1/3 Measuring cup
  • Pancake turner
  • Blender or food processor (optional, for homemade oat flour)

Ingredients

  • 2 cups oat flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1 scoop pumpkin-flavored protein powder
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla
  • 1 cup pumpkin puree
  • 2 large eggs
  • 4 tablespoons light butter melted
  • 1 1/2 cups protein milk

Instructions

  • Set out all the ingredients and melt the light butter before you start.
  • Combine the oat flour, baking powder, salt, pumpkin pie spice, cinnamon, and protein powder in a medium bowl. Whisk well.
  • In a large bowl, beat the brown sugar, vanilla, pumpkin, eggs, butter, and protein milk until smooth.
  • Pour the dry mixture into the wet and fold until just combined. Leave the lumps, then let the batter sit for 5 minutes.
  • Warm a lightly greased skillet or griddle over medium heat. Pour in about 1/3 cup of batter per pancake and cook for about 4 minutes.
  • Turn the pancakes and cook roughly 4 minutes longer, until golden. Add your toppings and serve.

Notes

  • The protein powder goes in with the dry ingredients so it doesn't clump in the wet mix.
  • Protein and calorie counts will vary based on the brand of protein powder and protein milk you use.
