Ingredients
  

  • 1 ounce Low Fat Cheddar
  • 10 strawberries
  • 4 licorice candies
  • 1 banana
  • 2 kiwi
  • 1 cucumber
  • 1 dark grape
  • crackers to serve

Instructions
 

  • 1.Rinse kiwi in cold water and pat dry with a towel. Remove the tough parts of the fruit, leave the skin on. Slice the kiwi into 1/3-inch circles and blot them in a paper towel to remove excess juice.
  • 2.Remove the tips from the cucumber and slice into 1/4-inch thick circles. Lay out the cucumbers in an overlapping shape and leaving gaps for eyes.
  • From the kiwi, form the lower part of the face. With a 2-inch diameter mold, cut a circle of cheese, cut it in half. Arrange cheese eyes. Place the candy pupils on the cheese and add the nose from the grapes.
  • Form a cap from the strawberry halves. Lay out the down and pompon from banana slices. Add details - eyebrows and a smile from licorice candy.

Notes

  • Blot the kiwi and banana well so the board stays neat and nothing slides.
  • Keep the cheese cold before cutting so the Grinch eyes hold their shape.
  • Build the face first then fill in the rest of the board to keep the proportions right.
  • Use firm strawberries so the hat sits nicely without shifting.
  • A flat platter works better than a curved one since fruit tends to roll.
