Ingredients
  

  • 1 lb. Boneless skinless chicken breasts cut into small pieces
  • ½ Red bell pepper finely chopped
  • ½ Onion finely chopped
  • 2 tsp. Minced garlic
  • 1 ½ tsp. Cajun seasoning
  • 1 ½ C. Almond flour
  • 2 Large eggs
  • 3 tsp. Baking powder
  • 6 Tbsp. Seltzer water
  • Salt and Black pepper to taste
  • Olive Oil for frying

Instructions
 

  • Add the almond flour, red bell pepper, onion, garlic, cajun seasoning, eggs, baking powder, seltzer water, chicken and salt and pepper to taste to a large mixing bowl, and stir to combine well.
  • Heat several inches of oil in a skillet or pot over medium-high heat. Form the fritter mixture into small patties, and drop into the heated oil.
  • Fry evenly on both sides until golden brown and cooked through completely. Drain the fritters on a paper towel-lined plate, and serve with your favorite dipping sauce.
