1lb.Boneless skinless chicken breasts cut into small pieces
½Red bell pepper finely chopped
½Onion finely chopped
2tsp.Minced garlic
1 ½tsp.Cajun seasoning
1 ½C.Almond flour
2Large eggs
3tsp.Baking powder
6Tbsp.Seltzer water
Salt and Black pepper to taste
Olive Oil for frying
Instructions
Add the almond flour, red bell pepper, onion, garlic, cajun seasoning, eggs, baking powder, seltzer water, chicken and salt and pepper to taste to a large mixing bowl, and stir to combine well.
Heat several inches of oil in a skillet or pot over medium-high heat. Form the fritter mixture into small patties, and drop into the heated oil.
Fry evenly on both sides until golden brown and cooked through completely. Drain the fritters on a paper towel-lined plate, and serve with your favorite dipping sauce.
