Preheat an indoor or outdoor grill. While that is heating up, drizzle the chicken with 1 tablespoon of olive oil, and season with salt and pepper to taste.

Turn the oven on to broil and Place the chicken into a baking dish, and top with the slice of mozzarella cheese.
