These baked Salmon Sushi Cups are a delicious and unique and fun twist on traditional sushi rolls. They are lower in carbs as we are using Cauliflower Rice instead of the traditional rice used in sushi plus we are placing them in the oven to cook them. This is a great option for a healthier and lighter meal while still satisfying those sushi cravings for all of my sushi lovers.
This Salmon Sushi Cup recipe are perfect for parties, gatherings or even as a quick and easy quick lunch. They are also customizable - you can fill them with your favorite sushi ingredients like avocado, cucumber, or even add some spicy mayo or hot sauce for an extra kick of flavor.

- Nori Substitute - If you don't have nori seaweed available, you can use a low carb tortilla or lettuce wrap instead for a similar texture and taste.

Pro Tips
- Make sure to pat the salmon dry before cooking to prevent excess moisture in the cups.
- I recommend that you spray each muffin cup lightly with nonstick cooking spray to prevent the salmon nori cup from sticking to the pan.
- Use a cookie scoop or ice cream scoop to easily portion out the mixture into the muffin tin
- These can also be served as a fun appetizer for parties or gatherings
- If you want to eat these without placing them in the oven, be sure to get a sushi grade cut, as this type of raw fish is safe to eat. You can purchase sushi-grade salmon from your local fish market or grocery store.
