The air fryer creates crispy, golden skin while keeping the meat juicy and tender inside. With a handful of pantry spices and very little prep, this is one of those meals I know I can count on when I need dinner on the table without a lot of effort.

Air Fryer Cajun Chicken

Chicken leg quarters are one of my favorite cuts of chicken because they’re affordable, flavorful, and almost impossible to dry out. That makes them perfect for busy weeknights, meal prep, or anytime you want a hearty dinner without spending a fortune. Since the air fryer does all the work, you also get crispy skin without heating up the whole kitchen.

I love using chicken leg quarters because the combination of the thigh and drumstick stays naturally juicy during cooking. Patting the chicken dry before seasoning helps the skin crisp up instead of steaming, while marinating gives the Cajun seasoning time to soak into every bite. Cooking the chicken skin side down first helps render some of the fat before flipping it over to finish crisping.

  • Chicken leg quarters – Chicken leg quarters include both the thigh and drumstick, giving you plenty of juicy, flavorful meat in one piece. Since they’re a darker cut of chicken, they’re much more forgiving than chicken breasts and stay moist while cooking in the air fryer.
  • Cajun seasoning – Cajun seasoning gives the chicken a smoky flavor with just a little heat. Every brand is different, so taste yours first since some blends contain much more salt than others.

Step 1: Pat the chicken leg quarters completely dry with paper towels. Removing as much moisture as possible helps the skin crisp instead of steam. In a small bowl, mix together the Cajun seasoning, garlic powder, and onion powder. Lightly coat the chicken with olive oil, then rub the seasoning mixture evenly over all sides. Cover and refrigerate for at least 2 hours or overnight for the best flavor.

Step 2: Preheat your air fryer to 380°F. Arrange the chicken leg quarters skin side down in a single layer, leaving space between each piece so the hot air can circulate. Avoid overcrowding the basket, or the skin won’t crisp as well. Cook for 30 minutes, flipping the chicken skin side up during the last 8 minutes of cooking.

Step 3: Begin checking the chicken during the final few minutes. Continue cooking until the skin is deep golden brown and crispy, and the thickest part of the chicken reaches an internal temperature of 165°F. Let the chicken rest for about 5 minutes before serving so the juices stay inside the meat.

Ingredients
  

  • 3 chicken leg quarters
  • 1 teaspoon Cajun seasoning
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • kosher salt to taste
  • ground black pepper to taste

Instructions
 

  • Pat dry chicken leg quarters on all sides. In a small bowl, combine spices – Cajun seasoning, garlic powder, and onion powder. Spritz some olive oil spray on all sides of the chicken. Add the seasoning mixture on to the and maranate chicken leg quarters for 2 hours or overnight.
  • Place chicken leg quarters, skin side down, on the Air Fryer tray. In a pre-heated Air Fryer Oven, insert the Air Fryer tray into the cooking chamber. Set at 380F (193C) for 30 minutes. At the last 8 minutes, flip chicken leg quarters, skin side up.
  • Keep watch at the last 5 minutes. Continue to cook chicken until golden brown and when the internal temperature of the thickest part reaches 165°F. Remove the chicken from the Air Fryer. Transfer to a serving platter. Serve immediately.

Notes

  • Bring the chicken out of the refrigerator about 20 minutes before cooking for more even results.
  • If one chicken quarter is much larger than the others, remove the smaller pieces first and continue cooking the larger one until it reaches 165°F.
  • Use silicone-tipped tongs when flipping the chicken to help keep the skin intact.
  • Store leftovers whole instead of removing the meat from the bone to help keep the chicken juicy when reheating.
